The National Association of Union Ex-Prisoners of War was founded in 1873 by Union Civil War veterans who had spent time in Confederate prisons, with local chapters around the country. The menu for the 1891 annual meeting of the Massachusetts chapter is an elaborate joke, featuring unappetizing items that each bear the name of a different Confederate prison.
